USDA Spec

IMPS 2020 §109E

In simple termsA lip-on bone-in ribeye roll prepared export-style, with the rib bones and a uniform short lip of plate still attached. Sold heavy to Japan, Korea, and Hong Kong, where buyers price the bone-in carry and rib presentation. Main muscle: longissimus dorsi.

Variant notealso called: Bone-in lip-on ribeye (steakhouse / tomahawk)

IMPS 109A — bone-in lip-on. The bone is the rib bone the ribeye eye sat on; the lip is the small accessory muscle (spinalis dorsi) on top of the eye. Cuts into bone-in ribeye steaks (the steakhouse 'cowboy steak') or long-bone-frenched tomahawk presentations. Trades premium to the boneless heavy (112A) when steakhouse demand is firm; spread narrows in summer when boneless ribeye carries the grilling-season bid.
