IMPS 109A — bone-in lip-on. The bone is the rib bone the ribeye eye sat on; the lip is the small accessory muscle (spinalis dorsi) on top of the eye. Cuts into bone-in ribeye steaks (the steakhouse 'cowboy steak') or long-bone-frenched tomahawk presentations. Trades premium to the boneless heavy (112A) when steakhouse demand is firm; spread narrows in summer when boneless ribeye carries the grilling-season bid.
As described in Item 109D except short plate removed by a straight cut ventral to but not more than 2.0 in from M. longissimus dorsi (uniform). PSOs available for short plate removal (1.0x1.0 in, 0x0 in, other).
