IMPS 2020 §112AIn simple termsThe lip-on boneless ribeye roll, with the short plate lip still attached on the back side. The most-traded ribeye subprimal in foodservice. Cut into ribeye steaks with the cap on for steakhouse and upscale retail programs. Main muscle: longissimus dorsi.
Heavy = 11 lbs and up, boneless lip-on. Cuts into 12-16 oz portion steaks that anchor steakhouse menus and the premium tier of retail steak cases. Trades premium to light through spring/summer grilling demand, then narrows in fall when ribeye demand softens and steakhouses pull back on portion size. Buyer needs to confirm the weight band with the plant (some plants split 11-14/14-up sub-grades).
Same as Item 112 except the 'lip' (M. serratus dorsalis and M. longissimus costarum and related intermuscular fat) remains attached on the short plate side and prepared by a straight cut ventral to but not more than 2.0 in from M. longissimus dorsi.
