In simple termsThe shoulder clod, the big lean muscle system of the front shoulder. One of the most-used cuts in foodservice fabrication. Yields clod heart roasts, flat iron steaks, petite tender, and a heavy lean grind contribution.

Large muscle system dorsal and posterior to the elbow joint, ventral and posterior to the ridge of the scapula, anterior to the 6th rib. Mm. cutaneous trunci / cutaneous omobrachialis (shoulder rose) removed when underlying fat exceeds specified thickness. M. teres major generally excluded unless specified.

The large boneless muscle group on the outside of the shoulder blade.
