Large muscle system of the chuck which lies under the blade bone: M. longissimus dorsi, M. rhomboideus, M. spinalis dorsi, M. complexus, M. multifidus dorsi, M. serratus ventralis, M. subscapularis, and M. splenius. Rib end exposes M. longissimus dorsi at least twice as large as M. complexus.

PSO 2: Arm removed immediately ventral to M. longissimus dorsi and M. complexus. PSO 3: M. subscapularis removed. PSO 4: hump meat (dorsal M. rhomboideus) removed.
