Boneless item consisting of the M. semimembranosus and related muscles of the inside portion of the leg, removed from the outside and tip portions along the natural seam. All bones, cartilage, exposed heavy connective tissue, lean and fat overlying the aitch bone (oyster), and the M. gracilis membrane (opaque portion) are removed.
