Three of every ten pork pounds that cleared today were trim, nearly double the usual share. Pork roll out ham and Choice flank steak are trading below their three week ranges. Choice inside skirt broke above its three week range. Pork insides turned lower after climbing earlier in the week. The Choice/Select spread widened $5.90 to $25.20/cwt, so trading down to Select saves more. Trmd sparerib - lgt has closed higher four days in a row. Wednesday's cattle kill 100,000 head, 18% under a year ago.
