Prepared from Item 405. All bones, cartilage, and skin removed. The belly side of the picnic must expose a cross-section of the cushion (M. triceps brachii group). The butt side must expose a full cross-section of the M. supraspinatus. Jowl removed by a cut not more than 1.0 inch anterior from the half-moon muscle. Tendinous ends of the shank removed to a point where a cross-sectional cut exposes at least 75 percent lean.
