Prepared from Item 410 and as described in Item 412 for the preparation of a bone-in center-cut pork loin wherein the sirloin end, bone-in is removed by a straight cut anterior to the hip bone and related cartilage exposing the M. gluteus medius. Unless otherwise specified, a portion of the tenderloin may remain.
