The plant has pulled the ventral flap (iliocostalis + inner abdominal oblique + cover fat) before sale. What is left is a clean longissimus loin eye, portion-ready for chops or roasts. The USDA IMPS 400 spec calls this PSO 3 of IMPS 413 ('belly strap off') and names the product 'Main Muscle' or 'Canadian Back' verbatim. Trades roughly $30-40/cwt premium to strap-on for the yield loss: a strap-off loin is about 30% lighter than the strap-on equivalent (Overholt 2018). End markets: case-ready pork chop programs at US retail and the Japan tonkatsu trade. Canadian processors like Olymel ship the same spec as 'FLCR' (False Lean Completely Removed).
Prepared from Item 412. Tenderloin, all bones and cartilages removed. On the blade end, the M. longissimus must be at least twice as large as the M. spinalis dorsi. Sirloin removed anterior to the hip bone cartilage and must expose the M. gluteus medius. Belly removed by a cut ventral to but not more than 4.0 inches from the M. longissimus at the blade end to a point on the sirloin end ventral to but not more than 3.0 inches from the M. longissimus.
