1x1 trim on the bone-in IMPS 175 strip loin: one inch of fat at the flank-side cap, one inch at the sirloin end. Common for steakhouse programs that portion bone-in NY strips in-house. Trades discount to 0x0 for the extra trim weight the buyer pays freight on but trims away.

Item 173 with tenderloin and protruding edge of chine bones removed. Chine bones removed along dorsal edge of spinal groove without scoring M. longissimus dorsi. Flank removed by a straight cut ventral to but not more than 6.0 in (rib end) / 4.0 in (sirloin end) from M. longissimus dorsi.
