Sold heavy to Asian export markets that price the skin carry, and as input for skin-on bellies before they are derinded for the domestic bacon stream. Main muscle: M. rectus abdominis.
Prepared from the side after removal of the leg, shoulder, loin, fat back, and spareribs. All bones and cartilages removed. Practically all leaf fat removed. Fat back removed by a straight cut not more than 1.5 inches from the outermost dorsal curvature of the scribe line. Anterior and posterior ends reasonably straight and parallel. Width of the flank muscle (M. rectus abdominis) at least 25 percent of the width of the belly on the leg end. Fat on the ventral side trimmed to within 0.75 inch from the lean.
