The strap is the ventral flap of meat and fat hanging off the belly side of the boneless loin: the iliocostalis muscle (along the rib line) plus the inner abdominal oblique, tapering from about 2 inches wide at the shoulder end to 0 at the sirloin end. Strap-on means it is still attached. Buyer trims the flap off before chopping or it diverts to grind. Trades discount to strap-off because the loin carries the extra flap weight that most buyers will trim anyway.

Prepared from Item 412. Tenderloin, all bones and cartilages removed. On the blade end, the M. longissimus must be at least twice as large as the M. spinalis dorsi. Sirloin removed anterior to the hip bone cartilage and must expose the M. gluteus medius. Belly removed by a cut ventral to but not more than 4.0 inches from the M. longissimus at the blade end to a point on the sirloin end ventral to but not more than 3.0 inches from the M. longissimus.
